My Favorite Cookie!!!
I got this recipe from my sister years ago. I used to babysit my nieces on Saturday nights and she would sometimes have these cookies in her fridge and I loved them. So when I grew up and out on my own, I asked for the recipe. When I tell people the name of it, their first reaction is, yuck. But they are THE ultimate chocolate fix!! Some people call them no bakes but I've always known them as.....
BOILED COOKIES
2 cups sugar
1 stick butter
4 tbsp cocoa
1/2 cup milk
Boil 1 1/2 minutes at full boil. Take off heat.
ADD:
2 1/2 cups oatmeal. (I actually add 3 cups, I like them thick!)
1/2 cup creamy peanut butter
2 tsp vanilla
1/4 cup chopped nuts, optional (I've never even tried them with nuts!)
Stir together and drop by teaspoon onto waxed paper. Let set until firm and transfer to refrigerator.
All I can say is, TO. DIE. FOR. I don't make them often because my husband & son don't care much for them, so I end up with the whole batch. No one needs that!!
