Taco Soup

Want to make a super quick and easy soup this week? It's hardy and and tastes great. It's a big hit in my house and it makes a huge pot. As usual, I double the recipe. My husband, Matt, is a leftover kind of guy so I always like to make extra, no matter what I'm making. He also likes to "dip" tortilla chips, especially scoops, in this soup. It's very meaty!

1 lb hamburger
1 onion, chopped
3 cans (15 1/2 oz) mild chili beans, undrained*
1 (14 1/2 oz) can diced tomatoes, undrained **
1 (14 1/2 oz) can corn, undrained
1 (8oz) can tomato sauce
1 package taco seasoning
1 1/2 cups water
1 1/2 cups Mexican cheese

Brown beef in dutch oven or soup pot with onions; drain. Add all remaining ingredients except cheese; stir, breaking up tomatoes. Bring to a boil. Simmer on medium-low for 5 minutes, stirring occasionally. Serve topped with cheese.

*I personally use 1 can of beans..my men are not crazy about a ton of beans, but you choose your amount ;)

** I buy petite diced tomatoes cause my son isn't crazy about big chunks of tomatoes.

And for extra's, don't forget to double!!

Matt likes this served with tortilla chips or scoops and sour cream. Enjoy!!
