Pineapple upside down cake

Today we celebrated my mom's 85th birthday. Her actual birthday is Thursday but we always do pizza and dessert on the Sunday before. My dad's birthday was exactly one week before hers, so when he was alive, we celebrated both of their on the Sunday in between.

I called my mom yesterday to see what she would want for dessert and she said, how about those brownies? My sister gave me a recipe for them a couple weeks ago. And how about your pineapple upside down cake? So that's what I made. Brownie recipe to follow in next post.

3/4 stick butter
brown sugar
1 can pineapple slices *
maraschino cherries *
yellow cake mix

Melt butter in a cast iron skillet. Use enough brown sugar to absorb butter, but leave it moist. Add a little at a time, you don't want it dry. Take off burner and put pineapple slices on top. Place maraschino cherries in center of each pineapple slice.

Make cake according to instructions on box. Use pineapple juice in place of 1/2 the water. Pour cake on top of pineapples slices. Bake according to directions. When done, turn over onto plate, letting sit for a few minutes, then lift off. You'll be able to see the cake pulling away from the skillet.

* I use crushed pineapple because the slices can be hard to cut through and sometimes drag off the cake. I don't use the cherries and should because Matt loves them....next time I will...after 24 yrs of making this for him lol.
